Fresh Bread

I was speaking with my manager this morning regarding the migraine diet. Something I didn’t know was that he has done a food engineering degree of all things.

He really couldn’t understand why fresh bread is worse than pre packaged sliced bread for instance. If anything the packaged stuff has more preservatives in it to keep it fresher longer. He also said the levels of yeast in fresh bread compared to old bread is not hugely different.

Anyone know a reason why fresh is not allowed?

The yeast is meant to be alot higher.
